Ingredients

  • 600g g Noodlesdry
  • 80g g Sesame oil
  • 100g g Soy sauce
  • 30g g Dark soy
  • 80g g Brown sugar
  • 35g g Garlicminced
  • 10g g Saltplus additional to taste while cooking
  • 4g g Black Pepper
  • 350g g Spinach
  • 600g g Porkthinly sliced
  • 100g g Wood ear mushroomsliced
  • 400g g Onionsliced
  • 130g g Scallioncut into 2-inch pieces
  • 120g g Carrotjulienned
  • 480g g Bell peppersliced

Steps

    Mince the garlic finely.

    In a bowl, combine soy sauce, dark soy, brown sugar, minced garlic, sesame oil, salt, and black pepper. Mix well to create the japchae sauce and set aside.

    Bring a large pot of water to a boil and add the glass noodles. Cook until tender, about 5-7 minutes. Drain and rinse with cold water to stop cooking. Set aside.

    Thinly slice the pork into bite-sized pieces.

    Thinly slice the wood ear mushrooms, keeping them separate.

    Thinly slice the onions and keep separate.

    Thinly slice the bell peppers and keep separate.

    Julienne the carrot into thin matchstick pieces.

    Cut green onions (scallions) into 2-inch pieces and keep separate.

    Bring a separate pot of salted water to a boil. Blanch the spinach for 1-2 minutes until wilted. Drain, squeeze out excess water, and set aside.

    Heat a large skillet or wok over medium-high heat. Add the sliced pork and cook until browned, about 3-4 minutes. Season with salt to taste. Transfer to a plate.

    In the same skillet, add the sliced wood ear mushrooms and cook for 2 minutes. Season with salt to taste. Transfer to the plate with pork.

    Add the sliced onions to the skillet and cook for 3-4 minutes until softened. Season with salt to taste. Transfer to the plate.

    Add the julienned carrot to the skillet and cook for 2-3 minutes. Season with salt to taste. Transfer to the plate.

    Add the sliced bell peppers to the skillet and cook for 3-4 minutes until tender-crisp. Season with salt to taste. Transfer to the plate.

    Return the skillet to medium heat. Add the cooked glass noodles, all cooked vegetables and pork, and the blanched spinach. Pour the prepared sauce over everything.

    Toss everything together over medium heat for 2-3 minutes until the noodles are well coated with the sauce and everything is heated through. Add the green onions and toss to combine.

    Taste and adjust seasoning with additional salt and black pepper if needed. Transfer to a serving platter and serve immediately.
