Ingredients
For the cocktail
- 2.0 oz oz High proof bourbon
- 0.75 oz oz Fresh lime juice
- 0.75 oz oz Cream of coconut
- 3.0 oz oz Fresh pineapple juice
- 6.0 whole Fresh sweet cherry — pitted
- 2.0 slices slice Fresh jalapeño
- 3.0 dashes dash Orange bitters
For the glass
- as needed to taste Pear wood smoke wash
- as needed to taste Ice — untempered for smoke wash, plus copious amounts for shaking
Garnish
- 1 whole Lime peel (optional)

Smoke-wash a chilled rocks glass using your preferred smoking method. Place untempered ice in the glass and let it sit to absorb the smoke, or add fresh ice after smoking.

Gather and prepare all ingredients: measure out the bourbon, fresh lime juice, cream of coconut, fresh pineapple juice, and orange bitters into small prep cups or a measuring station. Have fresh sweet cherries and fresh jalapeño slices ready on a cutting board. Prepare the lime peel for garnish.

In a chilled cocktail shaker, add the bourbon, fresh lime juice, cream of coconut, fresh pineapple juice, and orange bitters.

Add the fresh sweet cherries and fresh jalapeño slices to the shaker. Muddle vigorously until the cherries and jalapeño are broken down and flat, releasing their flavors into the liquid.

Add copious amounts of ice to the shaker, seal it, and shake vigorously for about 10–15 seconds until well-chilled and combined.

Pop open the shaker and double-strain the cocktail into the smoke-washed rocks glass filled with fresh ice.

Garnish with a lime peel and serve immediately.
